The lutetia liquid
pepper, composed of black and green peppercorns, contains
all of the active and aromatic constituents of pepper. Its
slighlty acid pH as well as its concentration in active
constituents make it particularly suitable for food production
: ready-made meals, preserves, cured meat and fish, etc.
Thermically freed from bacteria
and non-ionized, it strictly complies with the standards
in force as regards spices.
There are two kinds of liquid pepper
:
- The liquid pepper for ready-made meals, preserves.
- the
liquid pepper for salt products : more concentrated and
more acid, it is specially designed for dry cured products.
