Vin de Pays d'Oc
SITUATION
Domaine Astruc consists of 50 hectares on the "Coteaux Limouxin" of which 11 hectares are within the Limoux Appellation d'Origine Controlee and the other 39 hectares within the Vin de Pays d'Oc Appellation. The estate is planted with Chardonnay, Mauzac, Chenin, Viognier, Sauvignon, Cabernet, Merlot, Syrah, Pinot Noir and Malbec. It has built its reputation thanks to its unique soils and climate. Since 1802, Domaine Astruc has been renowned for the quality of its wines.
SOILS
Limestone and chalk for the Cabernet Sauvignon. Deep Limestone and gravel for the Merlot.
VINEYARD
22 years old Cabernet and 25 years old Merlot. Syrah is over 18 years old. 45 hl per hectare yield on average.
GRAPE VARIETIES
55% Merlot, 25% Cabernet Sauvignon, 20% Syrah.
VINIFICATION
Partly hand picked and partly mechanical harvest at night in order to avoid premature oxidation.
Destemming of the grape, each grape variety is vinified separately.
Fermentation at 25°C. 10 days maceration for the Cabernet, 12 days for the Merlot, 14 days for the Syrah under temperature control (28°C maximum).
The "assemblage" is made in November before putting the wine in barrels.
AGEING
60% of the blend is aged in oak barrel for 8 months (60% American oak, 40% French).
The other 40% of the blend is matured in stainless steel.
TASTING NOTES
Color: Deep purple red with ruby tints.
Nose: Elegant and complex with a quintescence of plums, spices and blackberries aromas finishing on spicy vanilla and liquorice notes.
Palate: Well balanced with smooth but present tannins. Long finish with cocoa notes.
FOOD AND WINE
Best served at 17°C, with pastas, barbecues, poultry, game, terrines and medium to strong cheeses.
Also delightful with chocolate cake as dessert.
IN YOUR CELLAR GARDE
If stores in good conditions, this wine can be kept up to 10 years. It will be at its best from mid 2005 until 2008.
